Note to self re: jam

Remember this for next time, Self!

When you think it might be ready, take a small amount of jam and put it in a dish, and let it cool off a bit.  THEN see if it sheets or seems thickened enough.  How would boiling hot jam sheet? Mine sure won’t.  And then once it’s cool, it’s too thick.
